Garlic Shrimp & Veggies

1lb shrimp

1/4 soy sauce

3 cloves garlic

1 tsp lemon juice

Salt and pepper to taste

1 tablespoon butter

mixed veggies ( my favorite are mushrooms, carrots, broccoli and peas)

1 c. Rice

Mix the soy sauce, garlic and lemon juice in a bowl. Marinade the shrimp

in the mixture for thirty minutes. Sprinkle salt and pepper on top.

Melt the butter in a skillet and throw in the shrimp until they are pink

Cook the rice according to directions and steam the vegetables. ( I added a teaspoon of butter, salt and pepper to the cooked rice for extra flavor)

Top the rice with the veggies and shrimp
